Ideas for Leftover Grilled Chicken

People throw out a lot of leftovers. Primarily because they don’t package it up properly so it sits open in the refrigerator becoming dry and unappetizing. Whenever you have leftovers put them in an air tight container or plastic baggie before putting them in the refrigerator, that way it retains its moisture and the flavor that you cooked into it, rather than tasting like everything in your fridge. When you use your leftovers for lunch or a snack you bless the convenience of already having it cooked and ideas for its use will abound the more often you have leftovers. Chicken is a very versatile meat that can be included in a lot of things, it can also be served hot or cold. Here are a few of the things to do with leftover grilled chicken.

The obvious uses of leftover grilled chicken would be to slice it up and put it in a green salad, make chicken, or make a chicken sandwich out of it. Grilled chicken is also great for a burrito with fresh vegetables and a dab of refried beans if you have any refried beans leftover. Chicken quesadillas call for grilled chicken as well and can be delicious, as well as easy and fast to make. If you wanted to make a snack of your leftover grilled chicken, you could slice it into large bite sized cubes, make a fried chicken batter, dip your chicken cubes, and make fried chicken poppers in 4-5 minutes. Since the chicken is already cooked, all you have to do is brown the batter and they are done, quick and easy.

Grilling extra chicken when you’re having grilled chicken for dinner is an excellent idea for appetizers, snacks, or even as an ingredient for tomorrow nights dinner as well. Having the chicken already prepared will make food prep much faster and easier the following night. For a snack or appetizer you can cube your grilled chicken, add a cherry tomato, a slice or half a sauteed mushroom, and a chunk of avocado or cucumber, and put skewer them all with a toothpick. You could also sautee some mushrooms, peppers, and onions then put them all together on a long skewer and serve hot or cold chicken skewers. Grilled chicken would also be tasty hot or cold in taco salad or shredded mixed with ranch dressing or a chip dip mix and served as a dip for tortilla chips.

A delicious second dinner that you can make in a snap with pre-grilled chicken is chicken fettuccine alfredo. You can make or buy a creamy white sauce, add your chicken some, sliced and sauteed mushrooms, boil your fettuccine and dinner is served! If you shred your leftover grilled chicken up, you could make chimichangas or any number of other dishes that call for shredded chicken in the recipe. With so many dishes and recipes that require precooked chicken, there is absolutely no reason why you should ever have to throw out leftover grilled chicken, or that it should sit in the refrigerator unwrapped, dried out, and uneaten. Leftovers don’t have to be neglected like an afterthought just because they weren’t eaten the first night that you cooked them. With a little imagination and a few additional ingredients, grilled chicken leftover in your fridge can be a time saver and a lifesaver when you get home from a long day at work.
